Aaron Michael’s Chili

My father, with whom I share a few names, grew up in Indiana under parents who had migrated from the South in search of factory work.  This recipe comes from them, my grandparents, and is an integral part of my southern identity. – Aaron-Michael Sapp

• 2 pounds ground beef
• 1 large onion, chopped
• 2 cloves garlic, diced
• 2 packages McCormick’s Original Chili seasoning
• 2 cans light kidney beans
• 3 cans diced tomatoes
• Salt and pepper to taste
• 1 tablespoon sugar
• 1 teaspoon chili powder

Brown ground beef, onion and garlic in a large pan. Drain if necessary.

Combine browned beef, onion and garlic with remaining ingredients in a large pot. Simmer for 20-30 minutes, adjusting salt, pepper and chili powder to taste.

Serve with dollop of sour cream and shredded cheddar cheese.

Tip
• The secret is just to add whatever the heck else the cook sees fit in the moment.
